Tender coconut sukha

Ingredients


Tender coconut flesh 1 cup
Cashew nuts about 10
Oil 1 tbsp
Chopped onions about 1 cup
Half a tomato chopped
Ginger garlic paste 1 tsp
Chilly powder about 1 tsp
Turmeric pdr 1/4 tsp
garam masala pdr 1/2 tbsp
Tomato ketchup 1 tbsp
Coriander leaves chopped 1 tbsp
Salt to taste



Method

Method

Cut the tender coconut flesh into strips and soak the cashew in water. Heat oil in a pan and saute the onions. Add tomato and cook till soft. Add tender coconut and cashew and saute for about 3 mins. Add the ginger garlic paste, turmeric, chilli pdr and garam masala. Pour a cup of water and cook till dry. Add salt and tomato ketchup and mix well. Garnish with coriander leaves.
