AVOCADO SANDWICH

Ingredients

Avocado - 1 peeled, pitted and mashed
Onion - 1/2 chopped finely
Tomato - 1 to 2 sliced
Green chillies - 1
1/4 cup Chopped coriander leaves
Alpha alpha sprouts - 1 cup
salt and pepper to taste
Juice of half a lime
Cheese slices - optional
8 slices of whole wheat bread


Method

Mash the avocado pulp and add chopped onions, green chilly, chopped coriander leaves and juice of half a lime and mix well. Add salt and pepper. Mix and apply a thick layer on slightly toasted whole wheat bread. Top the avocado mix with tomato slices and cheese slice. Top this with alpha alpha sprouts and cover with another slice of lightly toasted bread. This makes for a delicious and healthy sandwich.
